Chinese Bayberry Varieties: A Frozen Buyer Guide

The principal commercial Chinese bayberry varieties include Dongkui and Biqi, while regional cultivars such as Ding'ao, Shuijing, Fenhong, Xiazhihong, Zaodamei and others differ in fruit size, color, sugar-acid balance, harvest timing and postharvest behavior. For a frozen buyer, those differences matter, but a cultivar name is only the beginning of a usable specification.
Start by confirming the species, Myrica rubra, because "bayberry" can name unrelated plants in other markets. Then define cultivar or approved cultivar group, maturity, size grade, color, defects, pit status, processing time, freezing form, packing and the performance needed in your beverage, puree, jam, sauce or dessert. A large Dongkui fruit and a dark Biqi fruit can both be good raw materials, yet they do not create the same yield, flavor balance or visual result.
Direct answer: Dongkui is usually chosen when large fruit and visible whole-fruit presentation matter; Biqi is commonly associated with smaller, darker fruit and a different sugar-acid and aroma profile. Other red, pink and light-colored cultivars may fit specialized products. Do not approve any variety from its name alone. Compare representative lots after freezing and in the actual finished application.

First Confirm Chinese Bayberry, Not Just "Bayberry"
Chinese bayberry is the East Asian fruit widely called yangmei, yumberry, red bayberry or waxberry. The scientific name Myrica rubra is widely used in research and commerce. Taxonomic databases may also show Morella rubra as a synonym. That detail is not academic decoration: it prevents a purchasing team, laboratory or regulator from confusing the ingredient with North American bayberry or other plants that share a common name.
Put the controlled English name, scientific name, Chinese name if useful, cultivar, origin and product form on the same technical record. For example: "IQF whole Chinese bayberry, Myrica rubra, Dongkui, pit in, Zhejiang origin." If a supplier offers "red bayberry" without the botanical identity or cultivar, ask for the raw-material and traceability records before comparing price.

Dongkui and Biqi Are the Main Commercial Reference Points
Dongkui and Biqi appear repeatedly in Chinese bayberry research and commercial supply. Published comparisons show that variety changes fruit weight, color, soluble solids, sugars, organic acids and postharvest response. Those studies describe the measured samples, not a guaranteed specification for every orchard or crop. Use them to identify questions, then confirm the actual lot.

One study of 17 cultivars measured Dongkui as the largest fruit in that sample set, while Biqi was smaller and darker. A later four-cultivar study likewise described Dongkui as the largest and Biqi as the darkest among its tested cultivars. These consistent patterns are useful for shortlisting, but the figures must not be copied into a purchase contract as universal values. Orchard, season, maturity and grading alter the shipment.
Practical example: A dessert brand wants one recognizable berry per serving. It initially asks for Dongkui because the fruit is known for larger size. The trial reveals that the largest grade deforms in the depositor, while a slightly smaller grade remains intact. The final specification keeps Dongkui but narrows the acceptable diameter band and defines maximum broken fruit after a simulated production run.

Other Cultivars Expand the Color, Timing and Flavor Range
Chinese bayberry is not a two-variety crop. Research has compared red, pink and light-colored cultivars including Fenhong, Xiazhihong and Shuijing, along with regional types such as Ding'ao, Ciji, Dayexidi, Zaodamei and others. Their value is not that every importer should stock them. Their value is that they show how widely color, size, acid, sugar and postharvest behavior can vary inside the same species.
A light or pink cultivar may support a product whose color brief does not call for a deep purple-red puree. An earlier cultivar may change the production window; a later one may extend it. A smaller fruit may be economical for pulping even if it is unsuitable for a premium whole-fruit pack. Availability and export volume can be much narrower than for the main commercial cultivars, so confirm supply before making it essential to a formula.
Do not combine different cultivars under a single name without an agreed rule. An open "or equivalent" clause permits color, size and flavor to drift. If substitution is necessary, define the measurable boundary: approved cultivars, Brix and acidity range, color reference, size distribution, maximum defects and a retained finished-product control. This lets the supplier manage crop reality without turning the order into an unknown blend.

Variety Changes the Specification, but Maturity Can Change It Again
Fruit picked at different maturity stages can carry the same cultivar name and still behave differently. Research on Biqi, Dongkui and Zaodamei found postharvest quality changed with maturity. During development, soluble sugars rise and citric acid generally declines, while color deepens. A variety promise without a maturity rule therefore leaves sweetness, acidity, color and firmness uncontrolled.
For whole frozen fruit, define maturity through a combination of external color, Brix, titratable acidity or Brix-to-acid ratio, firmness where the method is workable, and sensory reference. One number cannot carry the whole decision. High Brix with very low acid may taste flat; strong color can coexist with softness; a firm under-ripe fruit may survive handling but fail the flavor target.
Set a sampling plan. Measure more than one fruit and more than one carton because bayberry crops are naturally variable. Record the instrument, temperature, sample preparation and calculation method. A refractometer result from expressed juice is not directly comparable if the next supplier measures a different fraction. Use the same protocol in approval and incoming inspection.
Practical example: A beverage processor receives two Biqi samples with similar dark color. Sample A has the sharper sensory profile and needs more sweetener; Sample B gives a rounder flavor but less color after dilution. The team runs both at the real dilution ratio, records Brix and titratable acidity, then approves a finished-beverage color and flavor window instead of declaring either crop "better."

Postharvest Speed Matters Because Bayberry Is Delicate
Chinese bayberry has a short fresh handling window. Studies of multiple cultivars show rapid changes in firmness, color chemistry, soluble solids, acidity and cell-wall components after harvest. Refrigeration slows some changes, but it does not turn delicate fruit into a robust commodity. For frozen supply, harvest-to-cooling and harvest-to-freezing time deserve the same attention as the variety name.
Ask for the crop region, harvest period, receiving temperature, sorting steps, hold conditions and freezing time. Examine evidence from the relevant lot rather than relying on a generic process diagram. Sorting should remove decayed, fermented, insect-damaged, immature, excessively soft and foreign material. Bayberry's textured surface makes visual examination important, while its softness makes rough handling risky. Define acceptable deformation and broken-fruit limits after freezing, not only at fresh reception. A raw fruit that passes intake may still fail as an IQF piece.
Cold-chain records matter after production as well. Temperature abuse can increase frost, clumping, color loss and softening after thawing. Specify storage and transport temperature, carton condition, lot coding and what evidence is reviewed at receipt. Frozen and Thawed Performance Must Be Tested Separately
Freezing preserves seasonal fruit for later use, but it does not preserve every fresh attribute unchanged. Ice formation can damage tissue, and thawing can produce drip loss, softening and shape change. A 2026 study describes Chinese bayberry as susceptible to freeze-thaw deterioration and evaluates a pretreatment designed to improve firmness and reduce weight loss. That is useful evidence that process matters, not permission to assume a specific treatment is present in a commercial lot.
Inspect the product in three states. Frozen inspection covers separation, frost, color, foreign material, size, broken fruit, carton and code. Controlled thawing shows drip, deformation, aroma and discoloration. Application testing shows what survives pulping, mixing, heating, dilution or frozen dessert manufacture. Record all three because a visually attractive frozen berry can collapse during thawing, while a soft thawed berry may still be excellent for puree.
Whole versus pitted is a major yield decision. Chinese bayberry contains a central stone. Pitting can damage the delicate flesh, while pit-in fruit requires stone removal or management in downstream processing. Confirm whether "seedless" means mechanically pitted, pulped and screened, or another form. State the allowed residual pit or fragment standard using one reproducible test on both sides.
Packaging must protect the fruit from compression, moisture loss and temperature fluctuation. Inner bag, net weight, headspace, carton strength and pallet pattern affect condition at arrival. Match the Cultivar and Form to the Finished Application
For a visible whole-fruit dessert, prioritize diameter distribution, surface condition, breakage and thawed shape. For juice or puree, prioritize usable pulp yield, stone removal, Brix, acidity, aroma, color and screen loss. For jam or sauce, cooking response and final viscosity matter. For a flavored dairy or frozen dessert, test color migration, acid interaction and flavor at the actual inclusion rate.

Worked example: A processor trials 1,000 kg of pit-in frozen bayberry for puree. After controlled thawing, 35 kg is separated as drip, 95 kg as stones and screen residue, and 20 kg as unacceptable fruit. Usable puree is 850 kg, so usable yield is 850 / 1,000 = 85%. At an illustrative delivered cost of USD 2.10 per kg, fruit cost per usable puree kilogram is USD 2,100 / 850 = USD 2.47 before processing. A second cultivar at USD 2.20 per kg but 91% yield costs USD 2.42 per usable kilogram. The higher invoice price gives the lower raw-material cost in this example. These are demonstration figures, not XMSD yield or price claims.
Keep formula ownership with the finished-product team. A cultivar with darker fruit can reduce the need for color correction, but only a controlled trial can show the effect. A sweeter crop may reduce added sugar, yet acidity and aroma can change at the same time. Compare the full formula cost and sensory result, not a single laboratory value.
Build a Purchase Specification That Can Survive Crop Variation
The item description should include Chinese bayberry identity, cultivar or approved cultivar group, origin, crop year or harvest period, whole or pitted form, IQF or block form, and intended use. Add measurable limits for diameter distribution, maturity, color, Brix, titratable acidity where relevant, foreign material, decay, damaged fruit, clumps and broken pieces.
Define the test method beside each limit. State the sample mass, number of cartons, thaw method, sieve or screen, defect definitions and calculation. Photographs help align color and shape but do not replace a numeric tolerance. Retain the approved sample or a documented visual and sensory standard when practical.
Food-safety and compliance requirements depend on origin, destination and application. Confirm pesticide-residue requirements, microbiological criteria, contaminants, additives or processing aids, allergen statement, traceability, label language and the documents required for import. Verify the certificate holder, scope and validity rather than accepting a list of logos. Set a controlled substitution rule. If the named cultivar becomes short, the supplier should not switch silently. Require advance disclosure, a new representative sample and proof that the replacement stays inside the approved application window. Price, availability and variety can then be managed without sacrificing the finished-product standard.
Separate the limits that protect identity from the limits that protect performance. Species, cultivar disclosure, origin and pit form protect identity. Size, color, defects, Brix, acidity, usable yield and finished-product results protect performance. A lot can be authentic Dongkui and still fail an agreed whole-fruit grade; it can be authentic Biqi and still miss a beverage flavor window. This separation keeps a genuine but unsuitable lot from being approved simply because its cultivar certificate is correct.
Also define how seasonal changes will be communicated. Before the crop, align the forecast volume, target cultivar, expected harvest window and sample schedule. During production, compare the first commercial lot with the pre-season reference. After arrival, record whether the shipment met the application test. That feedback gives the next crop plan a factual starting point and helps distinguish a one-lot deviation from a variety-wide mismatch.
Use a Two-Stage Approval Instead of One Attractive Sample
A hand-selected laboratory sample can show the intended variety and quality direction, but it may understate commercial variation. Stage one is development approval: compare cultivars and grades under a controlled method, choose the best application fit, and write the measurable limits. Stage two is commercial lot approval: sample production cartons across the lot and repeat the decisive checks before release or use.
Choose the checks that can change a decision. A whole-fruit dessert may need diameter distribution, broken-fruit percentage, drip loss and a photographed thawed reference. A puree program may need usable yield, Brix, titratable acidity, screen residue and finished-product color. Testing ten easy attributes while ignoring the one that controls line performance creates paperwork without reducing risk.
Agree the action for each failure class before ordering. Wrong species, undeclared cultivar substitution, foreign material or a food-safety failure normally stops approval. A marginal size or color result may be regraded, redirected to puree, discounted under a written concession or rejected according to the contract. The disposition should protect traceability and prevent the same cartons from returning as an undocumented replacement.
Practical example: A retail customer approves a carefully selected 26–30 mm Dongkui sample. Commercial-lot sampling later shows 18% of the fruit below 26 mm against an agreed 10% maximum. The flavor and safety results pass, so the team does not relabel the lot as fully compliant. It either agrees a documented concession for a processing use or rejects the size grade, while keeping the cultivar identity unchanged.
