How to do freeze drying?

Freeze drying removes water from food by sublimating water molecules into water vapor. Freeze-dried foods affect texture more than other methods of preservation, such as pot storage or freezing, but retain their nutritional value and flavor. Because freeze-dried foods are very light, they are especially good for carrying or storing in emergency containers while hiking.

1. Choose the type of food you want to freeze-dry. Foods rich in water are best suited for freeze-drying. Their ingredients remain intact after processing, and these foods are especially well preserved:

Fruits such as apples, bananas, berries, persimmons, and pears.

Vegetables such as potatoes, peppers, carrots, sweet potatoes, and parsnips.

Once you're familiar with the process, try freeze-drying chicken breasts, cheese, and even whole pieces of meat like pasta and meatballs. Any food rich in water can be preserved by freeze-drying.


2. Choose the freshest foods you can. Freeze-drying when food is most ripe or fresh ensures that it tastes good when eaten.

Fruits and vegetables should be stored freeze-dried when in season or fully ripe.

Meat should be freeze-dried and stored as soon as it is cooked and cooled.

Freeze - dry the meal as soon as it is cooked and cooled. Don't freeze-dry meals that have been in the fridge for days or they will taste like leftovers when you recook them.


3. Berries and apples don't need to be made anymore, and they actually taste good when they're freeze-dried. Freeze-dried meat or pasta, on the other hand, needs to be prepared with water to be eaten. So don't freeze-dry foods that aren't viable.

Bread is not suitable for freeze-drying because its taste depends on its freshness. Cakes, cookies, and other fermented foods are not suitable for freeze-drying.


4. Freeze-dried foods are processed. Prepare food for storage in the following steps:

If you can wash and air dries the food thoroughly.

Cut the food into small pieces. Slice apples, potatoes, and other fruits and vegetables to get rid of water.
