Freeze-dried and crispy fruits and vegetables

There are two processing methods for crisp fruits and vegetables, one is vacuum low temperature oil bath drying (VF) that we often eat now, and the other is vacuum freeze drying (FD).

The fruits and vegetables we currently buy on the market are crisp, most of them are in a low-temperature oil bath. After washing and sterilizing the fresh fruits and vegetables, they are quickly frozen to minus 30 degrees. The small ice crystals are sublimated in a vacuum environment, and then dried with vegetable oil at low temperature. Dehydrated. This processing method can indeed make the product taste crispy, but because the oil bath is still used, the essence is still fried food, in fact, the fat content will be much more than that of fresh fruits and vegetables.


Later, another kind of crispy fruits and vegetables was produced, using another process, vacuum freeze drying (FD). In the beginning, the fruits and vegetables are sterilized and washed, but the later is different. The FD process directly freezes the fruits and vegetables, sublimates the ice from the solid under vacuum conditions, and directly dehydrates the fruits and vegetables, completely avoiding oil bath drying. This method can maintain the original shape of the fruits and vegetables, and retain much more nutrients than VF, which may not be as good as the low-temperature oil bath process in terms of taste and mouthfeel.

Both processes are in demand in the market. Low-temperature oil baths can make fruits and vegetables into alternative puffed foods, and their calories are still lower than puffed foods. The freeze-drying technology is an alternative canned fruits and vegetables, which can indeed allow us to eat different fruits and vegetables throughout the year. The fruits and vegetables produced by these two processes are crisp and easy to distinguish, as long as they are crushed by hand, the fruits and vegetables in the low-temperature oil bath are crispy after being crushed and become fragments, while the freeze-dried ones are in powder form.
