Common Names Are Not Reliable Enough for Approval
A mushroom can have different common names across countries, languages and food channels. "Brown mushroom," "baby bella," "cremini" and "portobello" may point to commercial forms of the same species. "Black fungus," "wood ear" and "cloud ear" can also be used inconsistently.
Codex defines edible fungi as fungi suitable for food after necessary processing and defines mixed fungi as recognizable parts of different species combined in established proportions. Its general standard applies to edible fungi permitted for sale by the competent authorities in the consuming country. This means an exporter's familiar trade name does not replace destination-market acceptance or accurate species control.
Write the identity at three levels: common name used on the label, scientific name or controlled species reference, and commercial form. A line can read "cultivated shiitake, Lentinula edodes, sliced caps and stems," or "cultivated white button mushroom, Agaricus bisporus, whole." If a blend is used, state every component and its target percentage.
Never approve a wild mushroom from an image alone. The FDA Food Code uses a specific approved-source approach for wild mushrooms in food establishments and treats regulated cultivated or packaged processing-plant products differently. Your destination may have its own rules. Ask who identified the species, where it was harvested or cultivated, how the lot was segregated and which authority or regulated facility controls the product.

The table is a screening tool, not a universal sensory promise. Variety, maturity, cap size, growing condition, blanching, cut, freezing rate, storage age and cooking method all change the result. Request an order-specific sample and evaluate it in the actual recipe.
Use three filters when you reduce the list. First, reject any identity that the supplier cannot connect to an accepted species and regulated source. Second, reject a form whose geometry cannot survive your process: a delicate fan-shaped piece should not be expected to behave like a thick king-oyster slice. Third, compare the survivors on cooked usable yield and sensory result. This sequence prevents flavor preference from hiding an identity or process failure.
The important exceptions are application-specific. A broken shiitake piece can be acceptable in a minced filling but a defect in a premium visible garnish. Natural nameko viscosity can support soup body but can be unacceptable in a dry stir-fry blend. Porcini's strong aroma can justify a small formula percentage, while mild champignon may provide most of the bulk. Put that intended function beside every acceptance limit.

Button, Cremini and Portobello Are One Species, Not Three Independent Species
Agaricus bisporus is marketed in several forms. White button is the familiar small white form. Cremini or brown mushroom is a brown form generally sold at a relatively compact stage. Portobello is the larger mature form with an open cap. Treating these as three unrelated mushroom species can create a confused specification.
For frozen production, commercial form still matters. Small whole buttons provide recognizable pieces but can vary in diameter and require enough cooking time. Slices offer faster, more predictable incorporation into sauces and pizza toppings. Dice can distribute evenly in filling, but fine pieces may lose identity or release water faster. Shiitake has a darker cap and a more pronounced savory aroma than mild button mushrooms. It can give a soup, sauce or dumpling filling a distinct mushroom identity at a lower inclusion rate than a mild type, but that is a formulation judgment rather than a fixed conversion ratio.
The stem is firmer and can become woody, so "sliced shiitake" is incomplete. Define cap-only, cap-plus-stem or an allowed stem percentage. Set slice thickness, maximum large pieces, broken-piece limit and color expectation. For the frozen shiitake category, confirm which cut is being quoted before comparing price per kilogram.
Compare aroma after the real heat treatment and hold time. A short stir-fry, a long soup cook and a frozen ready-meal reheat expose different strengths and defects. Test chew, bitterness, woody pieces and purge after the complete process. Do not approve a health claim, flavor intensity or "more glutamate" statement without evidence for the actual product and measurement basis.

Oyster and King Oyster Need Different Cut Logic
Ordinary oyster mushrooms have broad, fan-like caps and an off-center stem. Their irregular shape can look natural and attractive, but it also makes piece-size distribution harder to control. Whole clusters, strips, slices and dice behave differently. Check torn edges, excessive stem base, fine fragments and how quickly the pieces soften.

Agree whether whole caps and stems are acceptable, the diameter band, stem length, broken-cap limit and the expected texture after heating. Your actual product may follow a destination-specific process or product standard, so verify the declared process and legal category. Do not assume that every frozen mushroom was blanched identically.
Blanching can affect enzyme activity, color, aroma, texture and surface water. Under-blanching can leave an unstable result; excessive heat can soften the product or dilute flavor. After cooling and drainage, residual surface water affects clumping and glaze. Ask for the process description and evaluate the finished lot rather than specifying only freezer temperature.
IQF pieces should remain sufficiently separate for the intended dosing method, but a small amount of contact freezing is not interpreted the same way for every shape. Whole buttons, delicate oyster pieces and viscous nameko will not look identical. Define how clumps are measured, what gentle separation is permitted, and the maximum unusable mass.

"Forest mix," "wild mix" or "gourmet mix" does not tell you whether the product contains 60% mild button slices, 20% shiitake, 15% nameko and 5% porcini, or a completely different formulation. The dominant species controls cost and often the bulk texture; smaller aromatic components may control flavor and visual identity.
Worked example: A 1,000 kg frozen blend targets 50% champignon, 25% shiitake, 15% oyster and 10% nameko. The nominal inputs are 500 kg, 250 kg, 150 kg and 100 kg. A cook trial shows usable retained yields of 88%, 84%, 80% and 90%, respectively. The estimated cooked usable mass is 440 + 210 + 120 + 90 = 860 kg. If the recipe requires 900 kg, you do not simply add 40 kg of the lowest-priced species; you rebalance the input while protecting the agreed flavor, identity and piece distribution. Your Purchase Specification Should Control More Than the Name
Identify species, common label name, cultivated or wild source, geographic origin where required, crop or production period, whole/slice/dice dimensions, cap-to-stem rule, blanching and additives. For blends, define the component percentages and tolerances. State whether the product is intended for further cooking.
Set defect limits using terms both sides can inspect: discoloration, damaged or broken pieces, woody stem, excessive small fragments, clumps, foreign vegetable matter, mineral contamination and pest damage. Match the sampling and test method to the limit. A photograph can calibrate appearance, but it does not replace a quantitative tolerance.
Confirm net weight, inner bag, carton, lot code, shelf life, storage temperature and cold-chain evidence. Review microbiological, chemical, pesticide, heavy-metal or other test requirements according to the product, origin and destination rules. Avoid copying one mushroom specification onto another species without a hazard and application review.
Finally, run an acceptance sample in the intended equipment. Record starting frozen weight, cooking method, time, temperature, drained or cooked weight, piece integrity, aroma, texture and finished-dish result. If the product will be held hot, chilled again or reheated, include that stage. Approval belongs to the actual process, not a tasting spoon prepared under ideal conditions.
Agree how a failed result changes the order. An identity mismatch or suspect wild-source record should stop approval. A cut-distribution failure may justify re-sorting, reprocessing or rejection according to the contract. A sensory mismatch may require a different species or blend ratio. Record the disposition and the evidence needed for any replacement sample so the second trial does not repeat the first uncertainty.
Keep a retained reference from the approved lot when the program is significant enough to justify it. Compare later shipments using the same thawing or direct-cook method, pan load, heating time and scoring sheet. Photographs help show color and cut, while retained notes capture aroma, toughness and purge that a photograph cannot prove. Escalate a trend before it becomes a formula-wide inconsistency.
