Mechanism of nutrient preservation:

 

   ●Frozen vegetables are usually frozen immediately after picking (usually below -18°C). At this extremely low temperature, the respiration of vegetables almost stops, and microorganisms cannot grow and reproduce, which locks in nutrients to the maximum extent.

 

   ●In contrast, fresh vegetables need to be transported and stored from the farm to the table. During this period, the enzyme activity inside the vegetables is still active, and exposure to air, light, and heat will lead to the continuous loss of vitamins (especially water-soluble vitamins such as vitamin C) and antioxidants.
